- 1-2 tsp organic, unrefined coconut oil
- 1 tsp curry powder
- 1 tsp sea salt or himalayan crystal salt
- 2 cups cooked quinoa
- 2 medium onions, diced
- 2 cups cooked vegetables (peas, corn, potatoes, capsicum, cabbage, etc.)
- Heat oil in a wok or saucpan.
- Add curry powder and sea salt.
- Saute onion for several minutes until translucent.
- Add other cooked vegetables. Saute several minutes.
- Add quinoa and adjust seasoning.
