Decadent Quinoa Breakfast for 2

Ingredients 

  • 1/2 cup white quinoa
  • 1 red apple greated - skin on
  • 1 Banana sliced
  • 2 tblspns pecan nuts - chopped
  • 2 tblspns sunflower seeds
  • 1/2 tsp cinnamon
  • pinch celtic salt
  • 1/2 cup coconut cream/milk
  • 1 tblspn flaxseed oil

Preparation

  1. Slow boil one cup of water with the quinoa for 10 minutes, lid on saucepan. Then turn off heat and leave to absorb the remaining water for another 10 minutes.
  2. While this is happening prepare the remaining ingredients.
  3. When quinoa is ready place in a bowl and combine other ingredients.
  4. You can add some chopped dates if you wish.
  5. Enjoy!
