Rich Coconut Chocolate Slice

Ingredients 

  • 70g raw cocoa powder
  • 130g organic coconut oil
  • 3/4 cup maple syrup
  • 50g coconut flour
  • 1/3 cup almonds/hazelnuts - roasted and roughly chopped
  • 4 organic eggs - separated
  • small pinch of salt

Preparation

  1. Grease a 24 x 18cm slice tin with coconut oil. 
  2. Preheat oven to 160C.
  3. Combine the cocoa powder with melted coconut oil.
  4. Whip egg yolks with maple syrup till well mixed and creamy. 
  5. Add the chocolate coconut oil mix to maple egg yolks and stir well. 
  6. Gently fold in the flour and the nuts till well combined
  7. Add salt to egg whites into the slice mix and transfer to slice tin. 
  8. Bake in pre-heated oven for approx. 20mins. 
  9. Remove from oven and allow to cool a little before turning out onto rack to cool completely.
