Moroccan Quinoa Pilaf
Ingredients
- 1 cup organic white quinoa
- 1 onion, diced
- 1 tbsp olive oil
- 1 tsp sea salt
- 4 tsps Moroccan spice mix (ras-el-hanout)
- 2 small red capsicums, diced
- 250g pumpkin, diced
- 2 cups vegetable stock
- Handful of fresh coriander, chopped
Preparation
- Place quinoa in a strainer and rinse thoroughly. Allow to drain.
- Heat olive oil in a large frypan and saute onion and capsicum for 5 minutes until softened.
- Add Moroccan spices, salt and pumpkin and saute for another 2 minutes until fragrant.
- Add drained quinoa and vegetable stock. Stir thoroughly and cover pan.
- Allow to simmer for 15-20 minutes until the liquid is absorbed and the vegetables cooked.
- Serve with coriander garnish.
