Moroccan Quinoa Pilaf

Ingredients

  • 1 cup organic white quinoa
  • 1 onion, diced
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • 4 tsps Moroccan spice mix (ras-el-hanout)
  • 2 small red capsicums, diced
  • 250g pumpkin, diced
  • 2 cups vegetable stock
  • Handful of fresh coriander, chopped

Preparation

  1. Place quinoa in a strainer and rinse thoroughly. Allow to drain.
  2. Heat olive oil in a large frypan and saute onion and capsicum for 5 minutes until softened. 
  3. Add Moroccan spices, salt and pumpkin and saute for another 2 minutes until fragrant. 
  4. Add drained quinoa and vegetable stock. Stir thoroughly and cover pan. 
  5. Allow to simmer for 15-20 minutes until the liquid is absorbed and the vegetables cooked. 
  6. Serve with coriander garnish.
