Red Quinoa Salad

Ingredients

  • 1 cup red quinoa
  • 1 small bunch coriander - finely chopped
  • 1/2 cup pine nuts - toasted
  • 1/2 cup pecan nuts - chopped and toasted
  • 1/2 broccoli head, florets - finely chopped
  • 1 lemon squeezed
  • 2 tblspns tamari
  • olive oil

Preparation

  1. Bring 2 cups of water to the boil and add quinoa, then simmer until all the water is absorbed (about 15 mins)
  2. Cool then add other ingredients
