Red Quinoa with Almonds and Parsley

Ingredients

  • 1 cup red quinoa
  • 1 1/2 tbsp extra virgin olive, macadamia or almond oil
  • 1/2 cup lightly roasted almonds*, roughly chopped
  • 1 cup flat-leaf parsley, roughly chopped
  • sea salt to taste

Preparation

  1. Rinse and thoroughly drain the quinoa and place in a saucepan with two cups of filtered water and 1/2 tsp sea salt. 
  2. Bring to the boil and then simmer on low heat (covered) for 30-50 minutes or until the water is absorbed and the grains are tender. 
  3. Leave to cool and then place into a large mixing bowl. 
  4. Add all remaining ingredients and mix well. 
  5. Check for seasoning and adjust to taste.  

*Place almonds on a baking tray and roast for 8-10 minutes in a 140C oven until fragrant and golden. Other nuts or seeds can be substituted such as macadamia, pecan, walnut or sunflower.
