Banana Bread
Ingredients
- 1 cup white spelt flour
- 1 cup wholemeal spelt flour
- 1 tsp low-allergy baking powder
- 1/4 tsp sea/himalayan salt
- 1 cup walnuts, toasted and chopped
- 1 1/2 cups ripe bananas, mashed
- 1/3 cup natural yoghurt
- 1/4 cup honey
- 2 large eggs, beaten lightly
- 1/4 cup sunflower oil
- 1 tsp vanilla extract
Preparation
- Preheat oven to 180C. Grease and flour a loaf tin.
- Combine the flours, baking powder, salt and walnuts and set aside.
- Mix the bananas, yoghurt, honey, eggs, oil and vanilla together.
- Fold the wet ingredients through the dry until combined, being careful not to over-stir.
- Pour the batter into the loaf tin and bake for 55 minutes, or until the loaf is golden and the cake comes away clean from the sides. Remove from the oven and set aside to cool. Keeps in fridge for up to 4 days.
