Honey-Muesli Muffins
Ingredients
- 250g wholemeal spelt flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 50g brown sugar
- 70g muesli
- 1 large egg
- 200ml rice/oat milk
- 80ml sunflower oil
- 65g honey
Preparation
- Sift flour, baking powder and salt into a bowl. Add bran left behind in sieve. Add sugar and muesli
- In a separate bowl, whisk egg, milk, oil and honey
- Pour egg mixture into dry ingredients and mix until just combined. Do not over-mix; batter should still be lumpy.
- Spoon into greased muffin cups, filling each to two-thirds full. Bake in a preheated oven at 200C for 15-20 minutes.
- Cool for a few minutes on a wire rack, then serve with warm butter.
