Honey-Muesli Muffins

Ingredients

  • 250g wholemeal spelt flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 50g brown sugar
  • 70g muesli
  • 1 large egg
  • 200ml rice/oat milk
  • 80ml sunflower oil
  • 65g honey

Preparation

  1. Sift flour, baking powder and salt into a bowl. Add bran left behind in sieve. Add sugar and muesli
  2. In a separate  bowl, whisk egg, milk, oil and honey
  3. Pour egg mixture into dry ingredients and mix until just combined. Do not over-mix; batter should still be lumpy.
  4. Spoon into greased muffin cups, filling each to two-thirds full. Bake in a preheated oven at 200C for 15-20 minutes.
  5. Cool for a few minutes on a wire rack, then serve with warm butter.
